Railway Lamb / Mutton Curry (mild Rogan Josh) is a direct throw back to the days of the British Raj, when travelling by train was considered aristocratic. This very popular and slightly spicy dish was served in Railway Refreshment Rooms and on long distance trains, with Bread or Dinner Rolls.

Ingredients:
• Lamb (mutton) - 500 grams.
• Mustard oil - 2 tablespoons.
• Red chili - 3 numbers.
• Whole garam masala (each) - 2 grams.
• Pepper corns - 1/2 teaspoons.
• Fennel seeds - 1/2 teaspoons.
• Bay leaves - 2 numbers.
• Onion - 1 numbers.
• Turmeric - 1/4 teaspoons.
• Ginger garlic paste - 1/2 teaspoons.
• Green chili - 2 numbers.
• Salt - 0 to taste.
• Potatoes - 100 grams.
• Tomatoes - 100 grams.
• Cumin powder - 1/2 teaspoons.
• Chili powder - 1-1/2 teaspoons.
• Nutmeg powder - 1 pinch.
• Vinegar - 1 teaspoons.
• Tamarind juice - 1/2 cup.
• Coriander (chopped) - 1/2 bunch.
Method:
1. Heat mustard oil in a pan, add red Chili, whole garam masala, pepper corns, fennel seeds, bay leaves, sliced onions, turmeric, salt cook it some time.
2. Add ginger garlic paste cook this till raw flavor is gone.
3. Add green Chili, potatoes and add parboiled mutton water, put the lid on and let it cook till potatoes are 70 % cooked.
4. Then add cumin powder, Chili powder, nutmeg powder and add mutton pieces (parboiled), tomatoes and add some water and put the lid on and let it cook for 10 minutes.
5. Add vinegar, tamarind juice cook for 2 minutes then add chopped coriander switch off the flame.
6. Serve this with Rice and Chapathi.
